But those days are gone.
Some things, however, can still be revived. All is not lost. Certain sizes and shapes of cigars have been brought back. And certain methods, too, can be picked up out of storage and put to good use once more. CAO Pilón cigars in particular pay homage to the fermentation methods of old.
A pilón is a stack of tobacco leaves piled high for the purpose of fermentation. This isn’t alcohol fermentation, where microorganisms turn sugar into booze. Instead, leaves are heated and wetted, causing them to release undesirable compounds like ammonia. The leaf turns darker and darker and becomes the familiar earthy and sweet Maduro we all know and love.
A modern pilón can be huge – 20 feet long, in some cases. An older pilón was smaller and more circular. Because of the reduced size, it takes longer to properly ferment the tobacco. This can result in a more complete fermenting and a different flavor profile. It is this method that the CAO Pilón was built around.
Using a luscious Nicaraguan long-filler blend and a painstakingly aged Ecuadorian Habano wrapper, the whole blend comes together beautifully. This wrapper leaf was prepared for smoking with more care than the average, resulting in a smoking experience that is quite enjoyable. Get it lit and take a draw for a leading flavor of pepper, carried on a cedar plank. Continue on for notes of maple coffee, and a thick, creamy smoke that really makes itself known. This ain’t no thin, wispy piece of puff – this is a dense cloud that you can totally sink your teeth into.
Sometimes, the old way is the best way.
